Pumpkin Chutney
Ingredients
- 250 grams Pumpkin (peeled and grated)
- 1 1/2 cups Water
- 1 cup Vinegar
- 1/2 tsp Red Chilli Powder
- 2 big Cardamoms
- 1 1/2 cups Sugar (heaped)
- 2 tsp Ginger (cut into long strips)
- 2 Cloves Garlic (chopped)
- 4 tsp Raisins
- 6 Almonds (blanched)
- 8 Dates (pitted)
- 3 tsp Salt

Preparation
- Scrape and grate the pumpkin.
- Chop garlic, slice ginger into strips, and stone the dates.

Cooking the Pumpkin
- In a saucepan, add grated pumpkin, water, garlic, ginger, and dates.
- Cook until the pumpkin becomes tender and most of the water evaporates.

Adding Flavorings
- Add vinegar, sugar, salt, red chilli powder, almonds, and raisins.
- Mix well and continue cooking over low heat.

Finishing
- Cook until the chutney thickens slightly and turns golden brown.
- Pour into sterilized bottles or airtight jars and let cool before sealing.
