Pumpkin Chutney

Ingredients

  • 250 grams Pumpkin (peeled and grated)
  • 1 1/2 cups Water
  • 1 cup Vinegar
  • 1/2 tsp Red Chilli Powder
  • 2 big Cardamoms
  • 1 1/2 cups Sugar (heaped)
  • 2 tsp Ginger (cut into long strips)
  • 2 Cloves Garlic (chopped)
  • 4 tsp Raisins
  • 6 Almonds (blanched)
  • 8 Dates (pitted)
  • 3 tsp Salt

Method

  1. Preparation

    • Scrape and grate the pumpkin.
    • Chop garlic, slice ginger into strips, and stone the dates.
  2. Cooking the Pumpkin

    • In a saucepan, add grated pumpkin, water, garlic, ginger, and dates.
    • Cook until the pumpkin becomes tender and most of the water evaporates.
  3. Adding Flavorings

    • Add vinegar, sugar, salt, red chilli powder, almonds, and raisins.
    • Mix well and continue cooking over low heat.
  4. Finishing

    • Cook until the chutney thickens slightly and turns golden brown.
    • Pour into sterilized bottles or airtight jars and let cool before sealing.
