Lemon Pudding

A soft, comforting steamed dessert infused with the bright zest of lemon, offering a perfect balance of sweetness and citrusy freshness.

Ingredients

  1. 4 oz breadcrumbs
  2. 1 oz flour
  3. ½ tsp baking powder
  4. 2 oz shredded suet
  5. 2 oz grated moist sugar
  6. Rind of 1 lemon
  7. 1 egg
  8. ¾ cup milk

Instructions

  1. Prepare the Dry Mixture

    • In a mixing bowl, combine breadcrumbs, flour, baking powder, and shredded suet.
    • Add grated moist sugar and the finely grated rind of one lemon.
    • Mix thoroughly to evenly distribute all dry ingredients.
  2. Add Wet Ingredients

    • Beat the egg lightly in a separate bowl.
    • Gradually pour in the milk and whisk together.
    • Add this mixture to the dry ingredients.
    • Stir well to form a smooth, consistent batter.
  3. Steam the Pudding

    • Grease a pudding mould generously with butter or oil.
    • Pour the prepared mixture into the mould, leaving some space at the top for expansion.
    • Cover the mould with a double layer of greased paper or foil to prevent water from entering.
    • Steam gently for about 2 hours, ensuring a steady simmer throughout.
  4. Prepare the Lemon Sauce

    • While the pudding steams, extract the juice from the lemon used for zest.
    • Prepare a simple lemon sauce by mixing the juice with sugar and warming gently until slightly thickened.
  5. Serve and Enjoy

    • Once steamed, carefully remove the pudding from the mould.
    • Serve warm, drizzled generously with the tangy lemon sauce.

Tip: For a richer texture, substitute part of the milk with cream or add a spoonful of golden syrup before steaming.
