Lemon Pudding
A soft and comforting eggless steamed lemon pudding infused with fresh citrus zest, offering a perfect balance of sweetness and tangy flavor. Best served warm with a light lemon sauce.

Ingredients
For Pudding
- 4 oz Breadcrumbs
- 1 oz Flour
- 1/2 tsp Baking Powder
- 2 oz Shredded Suet (or vegetable suet)
- 2 oz Grated Sugar
- Rind of 1 Lemon (finely grated)
- 3/4 cup Milk
- 1/2 cup Thick Curd (yogurt) or Applesauce (egg substitute)
For Lemon Sauce
- Juice of 1 Lemon
- 2–3 tbsp Sugar
- 1 tsp Cornflour (optional, for thickening)
- 1/2 cup Water

Prepare the Dry Mixture
- In a bowl, combine breadcrumbs, flour, baking powder, and shredded suet.
- Add grated sugar and lemon rind.
- Mix thoroughly to distribute evenly.

Add Wet Ingredients
- In another bowl, mix milk and curd (or applesauce).
- Add this to the dry mixture.
- Stir well to form a smooth batter of dropping consistency.

Steam the Pudding
- Grease a pudding mould well.
- Pour the mixture into the mould, leaving space for rising.
- Cover with greased paper or foil.
- Steam gently for about 2 hours.

Prepare Lemon Sauce
- In a pan, combine lemon juice, sugar, and water.
- Heat gently until sugar dissolves.
- Add cornflour slurry (optional) and cook until slightly thickened.

Serving
- Turn the pudding onto a serving dish.
- Drizzle warm lemon sauce over the pudding.
- Serve immediately.
