Lahsun Ki Chutney
A fiery and flavorful Rajasthani-style garlic chutney that adds a spicy punch to rotis, parathas, or snacks.
Ingredients
- 2 heads of garlic (peeled and separated into cloves)
- 6–8 tbsp red chili powder
- ¼ tsp fennel seeds (toasted and ground)
- Juice of 1 lemon
- Salt to taste

Prepare the Ingredients
- Peel and separate the garlic cloves.
- Toast the fennel seeds lightly and grind them into a fine powder.

Make the Chutney
- Combine the garlic cloves, red chili powder, ground fennel seeds, lemon juice, and salt in a blender.
- Add very little water—just enough to blend smoothly into a thick paste.

Chill and Store
- Transfer the chutney into an airtight container.
- Chill it before serving for enhanced flavor.
- This chutney keeps well for 2–3 days when refrigerated.
Serving Suggestion: Serve Lahsun Ki Chutney with bajra roti, pakoras, or as a spicy side to any Indian meal.
