Pear and Mango Chutney
Ingredients
- 250 gms Raw Firm Mango
- 250 gms Pears
- 500 gms Sugar
- 2 tsp Salt
- 1 tsp Red Chilli Powder
- 1 tsp Garam Masala
- 1 tbsp Melon Seeds (Kharbooja Seeds)
- 1 tbsp Raisins
- 2 Cloves, powdered
- 8 Almonds, chopped finely
- 8 Cashews, chopped finely

Preparation
- Peel and mash the mango and pears.
- Chop almonds and cashews finely.

Cooking the Chutney
- In a heavy saucepan, heat 1 tbsp sugar on low flame, stirring constantly until it turns brown.
- Add 500 ml water and bring to a boil.
- Add the remaining sugar and stir until dissolved.
- Once boiling, add the mashed fruits, cashews, raisins, melon seeds, red chilli powder, and salt.
- Boil on low-medium flame until a thick, jam-like consistency is achieved, stirring occasionally.
- Add powdered cloves and garam masala. Mix well.

Cooling & Storage
- Let the chutney cool slightly.
- Transfer to a clean, airtight jar.
- Store at room temperature or refrigerate for longer shelf life.
