Onion Chutney

A spicy and flavorful chutney made with sautéed onions, garlic, and red chilies, perfect with paratha or puri.

Ingredients

  1. Peeled onions – 1 cup
  2. Garlic flakes – 6–7
  3. Channa dal – 2 tbsp
  4. Red chilies – 5 (or to taste)
  5. Tamarind – little
  6. Mustard seeds – 1 tsp
  7. Curry leaves – few
  8. Salt – to taste

Method

  1. Fry ingredients

    • Heat oil in a pan
    • Add red chilies, channa dal, and garlic
    • Fry until aromatic
    • Add onions and sauté till golden brown
  2. Grind chutney

    • Transfer the fried mixture to a grinder
    • Add tamarind and salt
    • Grind to a smooth or slightly coarse paste
  3. Prepare tempering

    • Heat a little oil in a small pan
    • Add mustard seeds and let them splutter
    • Add curry leaves and sauté briefly
  4. Finish and serve

    • Pour the tempering over the chutney
    • Mix well
    • Serve with paratha or puri
