Mango Chutney 2
A tangy, sweet, spicy chutney made with green mangoes, vinegar, and aromatic spices.**
Ingredients 1/2 kg green mangoes 1 cup vinegar 1/2 cup water 1 tsp red chilli pepper 400–425 g sugar (2 1/2 heaped cups) 4 tsp salt 2 tsp ginger (cut into long strips) 2 cloves garlic 3/4 tsp big cardamom powder 60 g raisins (4 tsp)
Instructions

Prepare mangoes and aromatics
- Wash and dry the mangoes.
- Peel and slice them into thin long strips, removing the stones.
- Chop garlic very fine.
- Cut ginger into thin long strips.

Cook the base mixture
- Add mango slices, garlic, and ginger to water.
- Cook on low heat until the mixture turns tender.

Add spices and sweeteners
- Add sugar, vinegar, red chilli pepper, cardamom powder, salt, and blanched almonds.
- Stir continuously and cook until the mixture thickens and becomes golden.

Finish and store
- Remove from heat and add raisins.
- Mix well.
- Cool completely.
- Transfer to an airtight jar.
- Store in a cool, dark place.
