Mango Chutney 2

A tangy, sweet, spicy chutney made with green mangoes, vinegar, and aromatic spices.**

Ingredients 1/2 kg green mangoes 1 cup vinegar 1/2 cup water 1 tsp red chilli pepper 400–425 g sugar (2 1/2 heaped cups) 4 tsp salt 2 tsp ginger (cut into long strips) 2 cloves garlic 3/4 tsp big cardamom powder 60 g raisins (4 tsp)

Instructions

  1. Prepare mangoes and aromatics

    • Wash and dry the mangoes.
    • Peel and slice them into thin long strips, removing the stones.
    • Chop garlic very fine.
    • Cut ginger into thin long strips.
  2. Cook the base mixture

    • Add mango slices, garlic, and ginger to water.
    • Cook on low heat until the mixture turns tender.
  3. Add spices and sweeteners

    • Add sugar, vinegar, red chilli pepper, cardamom powder, salt, and blanched almonds.
    • Stir continuously and cook until the mixture thickens and becomes golden.
  4. Finish and store

    • Remove from heat and add raisins.
    • Mix well.
    • Cool completely.
    • Transfer to an airtight jar.
    • Store in a cool, dark place.
