Guava Chutney
Guava Chutney is a delightful blend of sweet, tangy, and mildly spiced flavors made from ripe guavas, aromatic spices, and a touch of vinegar. This vibrant chutney pairs perfectly with Indian meals, snacks, or even as a spread for sandwiches.
Ingredients
- 250 g guava
- 1 cup vinegar
- 2 cups water
- 1 level tsp red chilli powder
- 2 big cardamoms
- 180 g (1ΒΌ cups) sugar
- 2 level tsp salt
- 2 tsp ginger, cut into thin long strips
- 2 cloves garlic
- 1 tsp raisins
- 10 blanched almonds

Prepare the guavas:
- Peel the guavas and cut each fruit into four pieces.
- Carefully remove the seeds and slice the guava flesh into thin pieces.

Cook the base:
- In a pan, add the sliced guavas along with the ginger, garlic, and water.
- Cook over medium heat until the guava turns soft and pulpy.

Add flavoring ingredients:
- Once the guavas are tender, add sugar, crushed cardamoms, vinegar, red chilli powder, raisins, and almonds.
- Stir well to combine all the ingredients.

Thicken the chutney:
- Continue to cook the mixture on high heat, stirring occasionally, until it thickens and reaches a jam-like consistency.
- The chutney should coat the back of a spoon when ready.

Cool and store:
- Remove from heat and allow the chutney to cool completely.
- Transfer into a clean, dry glass jar and seal tightly with a cork or lid.

Serve:
- Let the chutney rest for a day to allow the flavors to mature.
- Serve with Indian breads, rice dishes, or snacks.
Tips:
- Choose ripe but firm guavas for the best flavor balance.
- Adjust the vinegar quantity to your preferred tanginess.
- This chutney keeps well for weeks when refrigerated in an airtight jar.
