Mango Chutney 1
A sweet-tangy chutney made with raw mangoes, sugar, and spices.**
Ingredients 1/4 cup refined oil 1 teaspoon mustard seeds 1/2 teaspoon turmeric powder 1 1/2 kg raw mango 1/2 teaspoon salt 1 cup water 5 cups sugar

Prepare the mangoes
- Peel the mangoes.
- Remove the seeds.
- Cut the mangoes into small pieces and keep aside.

Temper the spices
- Heat oil in a pan.
- Add mustard seeds.
- Allow them to crackle.

Cook the mango mixture
- Add turmeric powder, salt, and mango pieces.
- Stir well to coat everything evenly.
- Add water and bring the mixture to a boil.

Add sugar and thicken
- Add sugar once the mixture starts boiling.
- Continue boiling while stirring continuously to avoid burning.
- Cook until the chutney thickens.

Finish and store
- Remove from heat once thick.
- Cool to room temperature.
- Refrigerate and serve cold.
