Carrot Chutney

Carrot chutney is a flavorful and vibrant condiment that pairs well with dosa, idli, rice, or any South Indian meal.

Ingredients:

  • 2 cups grated carrots
  • 1/2 cup grated coconut (fresh or frozen)
  • 2-3 dry red chilies (adjust to taste)
  • 2 cloves garlic (optional)
  • 1-inch piece of ginger, chopped
  • 1 tablespoon oil (preferably coconut oil)
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black gram)
  • 1 teaspoon chana dal (split chickpeas)
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Fresh coriander leaves for garnish (optional)

Instructions:

  1. Prepare the Carrots:

    • Wash, peel, and grate the carrots. Set aside.
  2. Prepare the Chutney Base:

    • In a pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter.
    • Add urad dal, chana dal, and a pinch of asafoetida (hing) to the pan. Fry until the dals turn golden brown.
  3. Cook the Carrots:

    • Add grated carrots to the pan and sauté for 4-5 minutes until they are slightly cooked but still retain their crunch.
  4. Add Flavorings:

    • Add dry red chilies, chopped garlic, and chopped ginger to the pan. Sauté for another 1-2 minutes until fragrant.
  5. Grind the Chutney:

    • Allow the mixture to cool slightly, then transfer it to a blender or food processor.
    • Add grated coconut and salt to the blender along with the cooked carrot mixture.
    • Blend until you get a smooth paste-like consistency. Add a little water if needed to facilitate blending.
  6. Taste and Adjust:

    • Taste the chutney and adjust the seasoning according to your preference. Add more salt or red chilies if desired.
  7. Temper the Chutney (Optional):

    • In a small pan, heat a teaspoon of oil. Add mustard seeds and let them crackle.
    • Pour the tempering over the prepared carrot chutney and mix well.
  8. Garnish and Serve:

    • Transfer the carrot chutney to a serving bowl. Garnish with fresh coriander leaves if desired.
  9. Serve:

    • Serve the carrot chutney as a side dish with dosa, idli, rice, or any South Indian meal. You can also use it as a spread for sandwiches or wraps.
