Murukku

A crispy and traditional South Indian snack made with rice and urad dal flour, perfect for festive occasions and tea-time.

Ingredients

  1. 2 cups rice
  2. 1/4 cup urad dal (black gram split)
  3. 1 tsp cumin seeds
  4. 1/4 tsp asafoetida
  5. Salt to taste
  6. 1/4 cup white butter
  7. Coconut oil for frying

Instructions

  1. Prepare the Flours

    • Dry roast the rice in a warm pan without changing its color.
    • Wash and soak the rice for 30 minutes, drain, and spread on a cloth to remove moisture.
    • Grind the rice into a fine powder.
    • Broil the urad dal until light brown, cool, and grind into a smooth powder.
    • Sieve both flours together for a uniform texture.
  2. Make the Dough

    • Dissolve asafoetida and salt in 1/4 cup water.
    • Add cumin seeds and mix this into the flour.
    • Add butter and fully incorporate it into the flour.
    • Knead into a smooth dough, adjusting water as needed.
  3. Shape the Murukku

    • Grease your fingers and take a small portion of dough.
    • Roll it between your palms into a tube.
    • Shape into circles while gently twisting.
    • Form two circles next to each other and press the ends to secure.
    • Keep shaped murukkus covered with a wet cloth to prevent drying.
  4. Fry the Murukku

    • Heat coconut oil in a pan.
    • Gently slide in the murukkus and fry in batches.
    • Fry until light golden and crisp on both sides.
    • Drain and cool completely.
  5. Store

    • Transfer to an airtight container to keep them crisp.
