Murukku
A crispy and traditional South Indian snack made with rice and urad dal flour, perfect for festive occasions and tea-time.
Ingredients
- 2 cups rice
- 1/4 cup urad dal (black gram split)
- 1 tsp cumin seeds
- 1/4 tsp asafoetida
- Salt to taste
- 1/4 cup white butter
- Coconut oil for frying

Prepare the Flours
- Dry roast the rice in a warm pan without changing its color.
- Wash and soak the rice for 30 minutes, drain, and spread on a cloth to remove moisture.
- Grind the rice into a fine powder.
- Broil the urad dal until light brown, cool, and grind into a smooth powder.
- Sieve both flours together for a uniform texture.

Make the Dough
- Dissolve asafoetida and salt in 1/4 cup water.
- Add cumin seeds and mix this into the flour.
- Add butter and fully incorporate it into the flour.
- Knead into a smooth dough, adjusting water as needed.

Shape the Murukku
- Grease your fingers and take a small portion of dough.
- Roll it between your palms into a tube.
- Shape into circles while gently twisting.
- Form two circles next to each other and press the ends to secure.
- Keep shaped murukkus covered with a wet cloth to prevent drying.

Fry the Murukku
- Heat coconut oil in a pan.
- Gently slide in the murukkus and fry in batches.
- Fry until light golden and crisp on both sides.
- Drain and cool completely.

- Transfer to an airtight container to keep them crisp.
