Bandha Kobhi Chadchadee

Bandha Kobhi Chadchadee is a traditional dish from the Indian state of Odisha, also known as Odia Cabbage Curry.

Ingredients:

  • 1 small cabbage (about 500 grams), finely shredded
  • 2 potatoes, peeled and diced
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, slit lengthwise
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish (optional)

Instructions:

  1. Prepare Vegetables:

    • Finely shred the cabbage, dice the potatoes, chop the onions, and finely chop the tomatoes.
  2. Cook Potatoes and Cabbage:

    • Heat oil in a large pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
    • Add minced garlic and grated ginger. Saute for a minute until fragrant.
    • Add chopped onions and green chilies. Saute until onions turn translucent.
    • Add diced potatoes and cook for 2-3 minutes.
    • Add shredded cabbage to the pan. Stir well to combine all the ingredients.
  3. Add Spices:

    • Sprinkle turmeric powder, coriander powder, and red chili powder over the vegetables. Mix well to coat the vegetables with the spices.
  4. Cook Covered:

    • Cover the pan and cook the vegetables over medium-low heat for about 15-20 minutes, stirring occasionally, or until the potatoes and cabbage are tender.
  5. Add Tomatoes:

    • Once the potatoes and cabbage are cooked, add the chopped tomatoes to the pan. Mix well and cook for another 5-7 minutes until the tomatoes soften and blend into the curry.
  6. Check Seasoning:

    • Taste the curry and adjust salt and spices according to your preference.
  7. Garnish and Serve:

    • Once done, turn off the heat. Garnish the Bandha Kobhi Chadchadee with freshly chopped coriander leaves, if desired.
    • Serve hot with rice or roti.
