Bandha Kobhi Chadchadee
Bandha Kobhi Chadchadee is a traditional dish from the Indian state of Odisha, also known as Odia Cabbage Curry.
Ingredients:
- 1 small cabbage (about 500 grams), finely shredded
- 2 potatoes, peeled and diced
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2-3 green chilies, slit lengthwise
- 2-3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish (optional)
Instructions:

Prepare Vegetables:
- Finely shred the cabbage, dice the potatoes, chop the onions, and finely chop the tomatoes.

Cook Potatoes and Cabbage:
- Heat oil in a large pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
- Add minced garlic and grated ginger. Saute for a minute until fragrant.
- Add chopped onions and green chilies. Saute until onions turn translucent.
- Add diced potatoes and cook for 2-3 minutes.
- Add shredded cabbage to the pan. Stir well to combine all the ingredients.

Add Spices:
- Sprinkle turmeric powder, coriander powder, and red chili powder over the vegetables. Mix well to coat the vegetables with the spices.

Cook Covered:
- Cover the pan and cook the vegetables over medium-low heat for about 15-20 minutes, stirring occasionally, or until the potatoes and cabbage are tender.

Add Tomatoes:
- Once the potatoes and cabbage are cooked, add the chopped tomatoes to the pan. Mix well and cook for another 5-7 minutes until the tomatoes soften and blend into the curry.

Check Seasoning:
- Taste the curry and adjust salt and spices according to your preference.

Garnish and Serve:
- Once done, turn off the heat. Garnish the Bandha Kobhi Chadchadee with freshly chopped coriander leaves, if desired.
- Serve hot with rice or roti.
