Kuttu Ki Puri

A delicious and crispy Indian flatbread made with buckwheat flour and mashed potatoes, traditionally prepared during fasting days like Navratri.

Ingredients

  1. 2 cups buckwheat flour (kuttu ka atta)
  2. 4 potatoes (boiled and mashed)
  3. ½ tsp salt
  4. ½ tsp black pepper powder
  5. Clarified butter (ghee) for frying

Instructions

  1. Prepare the Dough

    • Boil and mash the potatoes until smooth.
    • In a large bowl, combine buckwheat flour, mashed potatoes, salt, and black pepper powder.
    • Mix well and knead into a soft, pliable dough.
  2. Shape the Puris

    • Divide the dough into small equal portions and roll them into balls.
    • Dust lightly with dry flour and roll each ball into a small circular puri (about 3–4 inches in diameter).
  3. Fry the Puris

    • Heat ghee in a deep frying pan over medium flame.
    • Gently slide one puri at a time into the hot ghee.
    • When it puffs up and turns golden on one side, flip and cook the other side until evenly browned.
    • Remove and place on absorbent paper to drain excess ghee.
  4. Serve

    • Serve hot with aloo sabzi, curd, or vrat-friendly chutney for a satisfying festive meal.
