Onion Rice

A quick and flavorful rice dish made with sautéed onions, mild spices, and a touch of lime for freshness.

Ingredients

  1. Cooked rice – 2 cups
  2. Onion – 1 (sliced)
  3. Oil – 2 tbsp
  4. Mustard seeds – 1/2 tsp
  5. Green chili – 1 (chopped)
  6. Garlic – 1 tsp (chopped)
  7. Salt – to taste
  8. Pepper – to taste
  9. Fresh coriander – 1 tsp (chopped)
  10. Lime juice – 2 tsp

Method

  1. **Prepare the tempering

    • Heat oil in a wok or pan
    • Add mustard seeds and allow them to splutter
    • Add chopped green chili
  2. **Sauté aromatics

    • Add chopped garlic and sauté until golden brown
    • Add sliced onions and sauté until soft and golden
  3. **Combine rice and seasoning

    • Add salt and pepper and mix well
    • Add cooked rice and gently toss to combine evenly
  4. **Finish the dish

    • Switch off the stove
    • Add lime juice and mix gently
  5. **Garnish and serve

    • Garnish with freshly chopped coriander
    • Serve hot as a main or side dish
