Onion Rice
A quick and flavorful rice dish made with sautéed onions, mild spices, and a touch of lime for freshness.
Ingredients
- Cooked rice – 2 cups
- Onion – 1 (sliced)
- Oil – 2 tbsp
- Mustard seeds – 1/2 tsp
- Green chili – 1 (chopped)
- Garlic – 1 tsp (chopped)
- Salt – to taste
- Pepper – to taste
- Fresh coriander – 1 tsp (chopped)
- Lime juice – 2 tsp
Method

**Prepare the tempering
- Heat oil in a wok or pan
- Add mustard seeds and allow them to splutter
- Add chopped green chili

**Sauté aromatics
- Add chopped garlic and sauté until golden brown
- Add sliced onions and sauté until soft and golden

**Combine rice and seasoning
- Add salt and pepper and mix well
- Add cooked rice and gently toss to combine evenly

**Finish the dish
- Switch off the stove
- Add lime juice and mix gently

**Garnish and serve
- Garnish with freshly chopped coriander
- Serve hot as a main or side dish
