Palak Rice
Ingredients
- 1/2 bunch palak, finely chopped
- 1 pod garlic, crushed
- A small piece of ginger, chopped
- 1 onion, chopped
- 1 tomato, chopped
- A few curry leaves
- 1 boiled potato, mashed
- 1 cup basmati rice
- Salt to taste
- 1/2 tbsp garam masala powder (optional)
For Seasoning
- 1 tbsp mustard seeds
- 1/2 tbsp urad dal
- 1/2 tbsp channa dal
- 1/2 tbsp green and red chillies, chopped

**Preparing ingredients
- Wash and finely chop the palak.
- Cook the basmati rice separately and keep aside.

**Making the base
- Heat oil in a wok.
- Add mustard seeds, urad dal, channa dal, and chopped green and red chillies.
- Fry until the dals turn golden.

**Cooking the palak mixture
- Add chopped onion and sauté until soft.
- Add chopped tomato and cook until mushy.
- Add chopped palak, mix well, cover, and cook until palak is fully done.

**Adding spices
- Add salt and garam masala powder (if using).
- Sauté for a minute.

**Mixing rice
- Remove from heat and gently mix in the cooked rice.

**Final touch
- In another pan, heat a little oil and lightly roast the mashed potato.
- Add curry leaves and mix this into the palak rice.

**Serving
- Serve hot palak rice with raita or curd.
