Indian Fried Rice
Indian Fried Rice is a flavorful rice dish cooked with ghee, whole spices, and onions, giving it a rich and aromatic taste. It can be served as a main course or as a side dish, often garnished with fried onions or slices of boiled eggs.
Ingredients:
- 400 gms rice
- 100 gms ghee or butter
- 65 gms onion, finely sliced
- 2 gms cinnamon
- 2 gms bay leaf
- 1 gm peppercorns
- 6 gms salt

Prepare the Onions:
- Heat ghee or butter in a large saucepan.
- Add the finely sliced onion and fry until golden brown. Remove the onions and keep aside for garnishing.

Cook the Rice with Spices:
- In the same hot ghee, add the washed and drained rice along with cinnamon, bay leaf, and peppercorns.
- Stir-fry for 4–5 minutes until the rice appears glossy and well-coated with the ghee.

Add Water and Cook:
- Add salt and pour in boiling water (about 1 inch above the level of rice).
- Boil and then reduce heat to a simmer until the water is almost absorbed.

Steam the Rice:
- Transfer the saucepan to a very slow oven at 250°F (about 120°C) for 20–25 minutes, or until the rice is cooked and fluffy.

Serve Hot:
- Fluff up the rice gently with a fork and serve garnished with the fried onions.
- Optionally, add slices of hard-boiled eggs for extra richness.
