Ingredients:

  • 400 gms rice
  • 100 gms ghee or butter
  • 65 gms onion, finely sliced
  • 2 gms cinnamon
  • 2 gms bay leaf
  • 1 gm peppercorns
  • 6 gms salt

Instructions:

  1. Prepare the Onions:

    • Heat ghee or butter in a large saucepan.
    • Add the finely sliced onion and fry until golden brown. Remove the onions and keep aside for garnishing.
  2. Cook the Rice with Spices:

    • In the same hot ghee, add the washed and drained rice along with cinnamon, bay leaf, and peppercorns.
    • Stir-fry for 4–5 minutes until the rice appears glossy and well-coated with the ghee.
  3. Add Water and Cook:

    • Add salt and pour in boiling water (about 1 inch above the level of rice).
    • Boil and then reduce heat to a simmer until the water is almost absorbed.
  4. Steam the Rice:

    • Transfer the saucepan to a very slow oven at 250°F (about 120°C) for 20–25 minutes, or until the rice is cooked and fluffy.
  5. Serve Hot:

    • Fluff up the rice gently with a fork and serve garnished with the fried onions.
    • Optionally, add slices of hard-boiled eggs for extra richness.

Indian Fried Rice pairs beautifully with curries, dals, or raita, making it a versatile dish for festive meals or everyday dining.
