Medu Vada
Medu Vada is a classic South Indian savory doughnut made from fluffy urad dal batter and deep-fried to golden perfection.
Ingredients
- Urad dal 200 g
- Oil for deep frying
- Salt to taste

Preparing the Batter
- Wash the urad dal thoroughly.
- Soak it for 5–6 hours.
- Wash again and drain excess water.
- Grind into a smooth, thick paste.
- Transfer to a bowl, add salt, and beat well until the batter turns light and airy.

Shaping and Frying the Vadas
- Heat oil to smoking point, then reduce to medium flame.
- Wet your spoon or fingers, take some batter, and shape it with a hole in the center.
- Gently slide the shaped vada into the hot oil.
- Fry on medium flame until golden brown and crisp.

Serving
- Serve hot with sambar and coconut chutney.
- Alternatively, soak in rasam to enjoy as Rasam Vada.
