Curd Rice 1
Curd Rice, a traditional South Indian comfort food, is a soothing blend of cooked rice, yogurt, and milk, tempered with mustard seeds, ginger, and green chillies — perfect as a cooling meal or side dish.
Ingredients
For the Curd Rice:
- 400 g rice
- 600 ml fresh curd (yogurt)
- 400 ml milk – boiled and cooled
- Salt – to taste
- 10 g fresh ginger – finely chopped
- 10 g green chillies – finely chopped
For the Tempering:
- 4 g mustard seeds
- A pinch of asafoetida (hing)
- 1 sprig curry leaves
- 30 ml oil
Method
Step 1: Cook the Rice
- Boil the rice in water with salt until soft but not mushy.
- Drain excess water if any, and set aside to cool slightly.
Step 2: Prepare the Base
- In a large bowl, mix the warm rice with curd and boiled, cooled milk.
- Stir in the finely chopped green chillies and ginger.
Step 3: Temper the Spices
- Heat oil in a small pan.
- Add mustard seeds and let them splutter.
- Add a pinch of asafoetida and curry leaves. Sauté briefly.
Step 4: Combine and Serve
- Pour the tempering over the rice-curd mixture and mix well.
- Serve at room temperature or slightly chilled.
Serving Suggestion
- Best served with pickle, papad, or a spoonful of ghee.
- A perfect cooling meal for hot days or as part of a South Indian thali.
