Curd Rice 1

Curd Rice, a traditional South Indian comfort food, is a soothing blend of cooked rice, yogurt, and milk, tempered with mustard seeds, ginger, and green chillies — perfect as a cooling meal or side dish.

Ingredients

For the Curd Rice:

  • 400 g rice
  • 600 ml fresh curd (yogurt)
  • 400 ml milk – boiled and cooled
  • Salt – to taste
  • 10 g fresh ginger – finely chopped
  • 10 g green chillies – finely chopped

For the Tempering:

  • 4 g mustard seeds
  • A pinch of asafoetida (hing)
  • 1 sprig curry leaves
  • 30 ml oil

Method

  1. Cook the Rice

    • Boil the rice in water with salt until soft but not mushy.
    • Drain excess water if any, and set aside to cool slightly.
  2. Prepare the Base

    • In a large bowl, mix the warm rice with curd and boiled, cooled milk.
    • Stir in the finely chopped green chillies and ginger.
  3. Temper the Spices

    • Heat oil in a small pan.
    • Add mustard seeds and let them splutter.
    • Add a pinch of asafoetida and curry leaves. Sauté briefly.
  4. Combine and Serve

    • Pour the tempering over the rice-curd mixture and mix well.
    • Serve at room temperature or slightly chilled.

Serving Suggestion

  • Best served with pickle, papad, or a spoonful of ghee.
  • A perfect cooling meal for hot days or as part of a South Indian thali.
