Microwave Paneer Matar

A quick and delicious paneer–peas curry made effortlessly using the microwave.

Ingredients

  1. **Main Ingredients

    • 100 g paneer (grated)
    • 1 cup shelled peas
    • Cashewnuts (optional)
    • Salt to taste
  2. **Spices & Flavorings

    • 1–2 green chillies
    • 1 medium onion
    • 1/2" ginger piece
    • 6 tbsp tomato puree
    • 1/4 tsp red chilli powder
    • 1/2 tsp cumin powder
    • 1/2 tsp garam masala powder
  3. **For Cooking

    • 2 tbsp oil
    • 6"-7" round microwave-safe dish (2" high) with cover

Instructions

  1. **Prepare the masala

    • Grind onion, green chillies, and ginger together.
    • Fry this paste in a non-stick pan for 4–5 minutes.
  2. **Add spices and microwave

    • Add tomato puree, garam masala, cumin powder, peas, and sprinkle 1 tbsp water.
    • Transfer the mixture to a microwave-safe dish and cook on HIGH for 3 minutes.
  3. **Add paneer and finish cooking

    • Add salt, grated paneer, 5 tbsp water, and cashewnuts; mix gently.
    • Cover and microwave again for 2 minutes, then let it stand for 2 minutes.
    • Serve garnished with fresh coriander and green chilli.
