Curd Rice 2
Curd Rice is a classic South Indian comfort dish made by mixing cooked rice with yogurt and tempered spices. This version adds coconut, ginger, and fresh coriander for enhanced flavor and texture.
Ingredients
For the Curd Rice:
- 1 cup boiled rice
- 2 cups plain yogurt (curd)
- 1/4 cup milk
- 1/2 teaspoon salt
- 2 tablespoons desiccated coconut
- Finely chopped coriander leaves – as needed
- 1–2 green chilies – finely chopped
For the Tempering:
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon chana dal
- 1 teaspoon urad dal
- 1½ teaspoons finely chopped ginger
Method
Step 1: Prepare the Tempering
- Heat oil in a saucepan.
- Add mustard seeds and let them splutter.
- Add chana dal and urad dal. Sauté for about a minute until golden.
- Add chopped ginger, green chilies, and coriander leaves.
- Sauté everything for another minute. Remove from heat.
Step 2: Combine the Ingredients
- Add the cooked rice to the tempered mixture and mix well.
- Stir in salt and desiccated coconut.
Step 3: Finish with Yogurt
- Just before serving, mix in the yogurt and milk.
- Stir until creamy and well combined.
Serving Suggestion
- Serve immediately as a cooling dish with pickle or papad on the side.
- Ideal for hot summer days, tiffin boxes, or part of a South Indian meal.
