Mooli Paratha

A flavorful North Indian stuffed paratha made with spiced radish filling and cooked to a crispy, golden finish.

Ingredients For Stuffing

  1. 3 radish (mooli)
  2. Salt to taste
  3. 1/2 tsp red chilli powder
  4. 1/2 tsp coriander powder
  5. 2 green chillies, finely chopped
  6. 2 tbsp coriander leaves

For Dough

  1. 2 cups wheat flour
  2. Salt to taste
  3. Water as needed
  4. Oil for frying parathas

Instructions

  1. Prepare the dough

    • Sieve wheat flour and salt together.
    • Add water gradually and knead into a stiff dough.
    • Cover and keep aside to rest.
  2. Prepare the stuffing

    • Peel and grate the radish.
    • Squeeze and remove all excess water.
    • Heat a pan and lightly fry the grated radish until pale brown.
    • Add salt, red chilli powder, coriander powder, green chillies, and coriander leaves.
    • Mix well and allow the stuffing to cool.
  3. Fill and shape the paratha

    • Take a portion of dough and roll into a small puri.
    • Place about 2 tsp of stuffing in the center.
    • Bring edges together to seal the stuffing.
    • Roll again into a thick round paratha.
  4. Cook the paratha

    • Heat a tava and place the rolled paratha on it.
    • Cook both sides until crispy and golden brown.
    • Drizzle a little oil on both sides while cooking.
  5. Serve

    • Serve hot with raita or curry.
