Khasta Puri

Khasta Puri is a crisp, flaky, and golden deep-fried Indian bread, perfect for pairing with spicy curries or sweet accompaniments during festive meals.

Ingredients

  1. 3 cups refined flour (maida)
  2. 1 tsp carrom seeds (ajwain)
  3. Salt to taste
  4. 3 tbsp oil (for dough)
  5. Oil for deep frying

Instructions

  1. Prepare the Dough

    • In a large mixing bowl, combine refined flour, carrom seeds, salt, and 3 tbsp oil.
    • Gradually add warm water to form a firm dough.
    • Knead the dough well until smooth.
    • Cover the dough with a damp cloth and let it rest for about 1 hour.
  2. Shape the Puris

    • After resting, divide the dough into small, equal-sized balls.
    • Roll each ball into a small, evenly thick puri (about 4–5 inches in diameter).
  3. Fry the Puris

    • Heat oil in a deep pan over medium flame.
    • Once the oil is hot, carefully slide in a puri.
    • Press gently with a slotted spoon so it puffs up.
    • Fry until both sides are golden brown and crisp.
    • Remove and drain on paper towels to remove excess oil.
  4. Serve

    • Serve hot and crispy with aloo sabzi, chana masala, or pickle for a delightful traditional meal.
