Khasta Puri
Khasta Puri is a crisp, flaky, and golden deep-fried Indian bread, perfect for pairing with spicy curries or sweet accompaniments during festive meals.
Ingredients
- 3 cups refined flour (maida)
- 1 tsp carrom seeds (ajwain)
- Salt to taste
- 3 tbsp oil (for dough)
- Oil for deep frying

Prepare the Dough
- In a large mixing bowl, combine refined flour, carrom seeds, salt, and 3 tbsp oil.
- Gradually add warm water to form a firm dough.
- Knead the dough well until smooth.
- Cover the dough with a damp cloth and let it rest for about 1 hour.

Shape the Puris
- After resting, divide the dough into small, equal-sized balls.
- Roll each ball into a small, evenly thick puri (about 4–5 inches in diameter).

Fry the Puris
- Heat oil in a deep pan over medium flame.
- Once the oil is hot, carefully slide in a puri.
- Press gently with a slotted spoon so it puffs up.
- Fry until both sides are golden brown and crisp.
- Remove and drain on paper towels to remove excess oil.

- Serve hot and crispy with aloo sabzi, chana masala, or pickle for a delightful traditional meal.
