Marge Gojju

A tangy, spicy curd-based gojju with roasted spices for rich flavor.**

Ingredients

  1. 2 1/2 tsp cooking oil
  2. 1/4 tsp urad dal
  3. 5–6 dry red chillies
  4. 1/2 tsp sesame seeds
  5. Pinch of asafoetida
  6. 1/4 tsp mustard seeds
  7. Salt to taste
  8. 1–1 1/4 cup thick curd

Instructions

  1. Roast the spices

    • Heat oil in a heavy-bottomed pan.
    • Add dry red chillies, urad dal, mustard seeds, asafoetida, and sesame seeds.
    • Roast them well until aromatic.
    • Add salt before turning off the flame.
    • Let the mixture cool completely.
  2. Make the spice powder

    • Mash and crush the roasted ingredients using a ladle.
    • Continue pounding until it becomes a fine powder.
    • Use a small grinding stone if needed for a smoother texture.
  3. Finish the gojju

    • Add thick curd to the powdered mixture.
    • Mix thoroughly until well combined and smooth.
