Marge Gojju
A tangy, spicy curd-based gojju with roasted spices for rich flavor.**
Ingredients
- 2 1/2 tsp cooking oil
- 1/4 tsp urad dal
- 5–6 dry red chillies
- 1/2 tsp sesame seeds
- Pinch of asafoetida
- 1/4 tsp mustard seeds
- Salt to taste
- 1–1 1/4 cup thick curd

Roast the spices
- Heat oil in a heavy-bottomed pan.
- Add dry red chillies, urad dal, mustard seeds, asafoetida, and sesame seeds.
- Roast them well until aromatic.
- Add salt before turning off the flame.
- Let the mixture cool completely.

Make the spice powder
- Mash and crush the roasted ingredients using a ladle.
- Continue pounding until it becomes a fine powder.
- Use a small grinding stone if needed for a smoother texture.

Finish the gojju
- Add thick curd to the powdered mixture.
- Mix thoroughly until well combined and smooth.
