Methi Baigan

Methi Baigan is a simple, earthy stir-fry combining methi’s bitterness and brinjal’s softness for a balanced, delicious side dish.

Ingredients

  1. **Vegetables

    • 1 green chilli, slit
    • 1/2 bunch fenugreek leaves (methi)
    • 3 baby brinjals
  2. **Spices & Seasoning

    • Salt to taste
    • 1 pinch sugar
    • 1 tsp cumin seeds
  3. **Other

    • Oil for frying

Instructions

  1. **Prepare the vegetables

    • Cut the brinjals into cubes.
    • Wash the methi leaves thoroughly, roughly chop, and set aside.
  2. **Fry the brinjals

    • Heat oil in a kadhai.
    • Deep fry the brinjal cubes until golden and set aside.
  3. **Cook the methi and combine

    • Heat 1 tbsp oil in a pan.
    • Add cumin seeds and the slit green chilli.
    • Allow the cumin to crackle.
    • Add the washed methi leaves.
    • Cover and stir-fry for a few minutes.
    • Add salt and a pinch of sugar; cook until the methi is done.
    • Add the fried brinjals and stir-fry for another 2 minutes.
    • Serve hot.
