Methi Baigan
Methi Baigan is a simple, earthy stir-fry combining methi’s bitterness and brinjal’s softness for a balanced, delicious side dish.
Ingredients

**Vegetables
- 1 green chilli, slit
- 1/2 bunch fenugreek leaves (methi)
- 3 baby brinjals

**Spices & Seasoning
- Salt to taste
- 1 pinch sugar
- 1 tsp cumin seeds

**Other
- Oil for frying
Instructions

**Prepare the vegetables
- Cut the brinjals into cubes.
- Wash the methi leaves thoroughly, roughly chop, and set aside.

**Fry the brinjals
- Heat oil in a kadhai.
- Deep fry the brinjal cubes until golden and set aside.

**Cook the methi and combine
- Heat 1 tbsp oil in a pan.
- Add cumin seeds and the slit green chilli.
- Allow the cumin to crackle.
- Add the washed methi leaves.
- Cover and stir-fry for a few minutes.
- Add salt and a pinch of sugar; cook until the methi is done.
- Add the fried brinjals and stir-fry for another 2 minutes.
- Serve hot.
