Marwadi Gatta Kadhi
Marwadi Gatta Kadhi is a traditional Rajasthani dish made with spiced gram-flour dumplings simmered in a tangy yogurt-based kadhi.
**Ingredients
- 1 tbsp ghee
- 1/2 tsp coriander seeds
- Oil for deep frying
- A pinch of baking powder
- 2 cups chopped coriander leaves
- 1 tsp red chilli powder
- 1 tsp turmeric powder
- 2 cups bengal gram flour (besan)
- 4 curry leaves
- Salt to taste
- 1/4 tsp cumin seeds
- 2 cups yogurt
- 1 tsp chopped green chillies
**Instructions

Prepare gatta dough
- Keep 2 tbsp besan aside for kadhi
- Mix remaining besan with baking powder, turmeric, red chilli powder, and salt
- Add water gradually to form a hard dough
- Knead well and rest for 10 minutes

Cook and fry gatta
- Divide dough into four portions and roll into cylindrical shapes
- Boil cylinders in salted water until cooked
- Remove, cool slightly, and cut into small pieces
- Deep-fry pieces in medium-hot oil until lightly browned
- Set aside

Prepare kadhi mixture
- Mix reserved besan with yogurt thoroughly

Make tempering
- Heat ghee
- Add coriander seeds, cumin seeds, green chillies, and curry leaves
- Stir-fry briefly

Cook kadhi
- Add besan-curd mixture, red chilli powder, and turmeric
- Stir continuously on low heat for a few minutes
- Add water, adjust salt, and cook until kadhi reaches medium-thick consistency

Combine and serve
- Add fried gatte to the kadhi and bring to a boil
- Top with chopped coriander leaves
- Serve hot
