Palak Dosa
Ingredients
- 2½ cups rice (soaked for 1 hour)
- 1 lemon-sized ball tamarind
- 8–9 dried red chillies (adjust to taste)
- 2½ tbsp coriander seeds
- 1 heaped tsp cumin seeds
- 2½ tsp salt
- ¼ tsp turmeric
- 1 piece jaggery (about 2½ times the tamarind size, or to taste), powdered
- ¼ small coconut, grated
- Fresh spinach (palak), finely chopped
Method

**Preparing the batter base
- Drain the soaked rice.
- Add rice, tamarind, red chillies, coriander seeds, cumin seeds, turmeric, and grated coconut into a mixer.
- Grind to a smooth, fine paste using required water.

**Adding palak and seasoning
- Transfer the ground batter to a bowl.
- Add freshly chopped spinach, salt, and powdered jaggery.
- Mix well to get a dosa batter–like consistency.

**Making the dosas
- Heat a dosa tawa and grease lightly.
- Pour a ladle of batter and spread gently into a thin circle.
- Cook on medium flame until crisp and cooked through.

- Remove from the tawa and serve hot.
- Enjoy with mild chutney or curd.
