Buttermilk Dosa

Buttermilk dosa is a popular South Indian dish made from fermented rice and buttermilk batter. It's crispy on the outside and soft on the inside, with a slightly tangy flavor from the buttermilk. Ingredients:

  • 2 cups dosa rice (or any short-grain rice)
  • 1/2 cup urad dal (split black gram)
  • 1/2 cup poha (flattened rice)
  • 1 cup buttermilk
  • Salt to taste
  • Oil or ghee for cooking

Instructions:

  1. Prepare the Rice and Dal:

    • Rinse the dosa rice and urad dal separately under cold water until the water runs clear.
    • Soak the rice, urad dal, and poha in water separately for at least 4-6 hours, or overnight. Drain the water after soaking.
  2. Grind the Batter:

    • In a blender or wet grinder, grind the soaked rice and urad dal separately into a smooth batter. Use a little water as needed to grind, but keep the batter thick.
    • Combine the ground rice and urad dal batter in a large bowl. Add buttermilk and mix well. The buttermilk adds a tangy flavor and helps in fermentation.
    • Cover the bowl and let the batter ferment in a warm place for 8-12 hours or overnight. The fermentation process helps to make the dosa light and airy.
  3. Season the Batter:

    • Once the batter is fermented, it will have a slightly sour smell and will be slightly risen. Stir the batter well and add salt to taste. Mix until well combined.
  4. Make the Dosa:

    • Heat a non-stick or cast-iron dosa tawa (griddle) over medium-high heat. Once the tawa is hot, reduce the heat to medium-low.
    • Pour a ladleful of the dosa batter onto the center of the tawa.
    • Using the back of the ladle, spread the batter in a circular motion to form a thin dosa. Drizzle a little oil or ghee around the edges of the dosa.
    • Cook the dosa until the edges start to brown and crisp up, and the surface of the dosa appears cooked. This may take 1-2 minutes.
    • Flip the dosa using a spatula and cook for another 1-2 minutes on the other side until it turns golden brown and crispy.
  5. Serve:

    • Remove the dosa from the tawa and serve hot with your favorite chutney, sambar, or potato masala.
  6. Repeat:

    • Repeat the process with the remaining batter to make more dosas.
