Mango Jam

A smooth, fruity spread made from ripe mango pulp and natural preservatives.

Ingredients

  1. 2 1/2 cups mango pulp
  2. 250 g sugar
  3. 1/4 tsp citric acid
  4. 1 tsp pectin
  5. 1/4 tsp potassium metabisulphite

Instructions

  1. Cook the mango pulp

    • Combine mango pulp and sugar in a pan.
    • Cook on medium heat until the mixture thickens.
    • Test by dropping a little on a plate—if it sets, it’s ready.
  2. Add the preservative mixture

    • Dissolve citric acid, pectin, and potassium metabisulphite in 1/4 cup hot water.
    • Mix this solution into the thickened jam thoroughly.
  3. Store the jam

    • Pour the hot jam into sterilized jars.
    • Allow it to cool completely.
    • Seal and cork the jars tightly.
