Ingredients

  • 1 tsp coffee
  • 1 packet lemon jelly
  • 2 cups fresh cream
  • 3 tbsp sugar

Instructions

  • Prepare the lemon jelly base: Boil 2 cups of water in a saucepan. Dissolve the lemon jelly completely in the boiling water, stirring continuously to avoid lumps. Once fully dissolved, remove from heat and allow it to cool slightly.

  • Set the lemon jelly layer: Pour a portion of the prepared lemon jelly into a serving tin or mold. Place it in the refrigerator and chill until it is fully set, forming the base layer of the pudding.

  • Prepare the coffee jelly layer: To the remaining lemon jelly, mix in 1 tsp of coffee until evenly incorporated. Pour this coffee-infused jelly into a separate container and refrigerate until firm.

  • Sweeten and blend the cream: Grind or lightly whip the sugar and mix it into the fresh cream until smooth and slightly thickened. This ensures the cream layer is sweet and well-blended.

  • Combine coffee jelly with cream: Once the coffee jelly is set, break it into small pieces and fold it gently into the sweetened cream mixture. Mix carefully to retain a creamy consistency without fully dissolving the coffee jelly pieces.

  • Assemble the pudding: Remove the lemon jelly base from the refrigerator. Spread the coffee cream mixture evenly over the set lemon jelly layer, ensuring a smooth and uniform top.

  • Final chilling: Refrigerate the assembled pudding for at least 2–3 hours, or until fully firm and chilled.

  • Serve chilled: Once set, cut into desired portions and serve chilled for a refreshing and flavorful dessert experience.
