Coconut Chutney (Type 2)
A vibrant and herbaceous Coconut Chutney variation — this green, pesto-style chutney blends coconut, cilantro, ginger, and lemon for a fresh and zesty accompaniment to South Indian dishes.
Ingredients
For the Chutney:
- 3 tablespoons shredded coconut
- 1-inch piece fresh ginger – chopped
- 1 fresh green chilli
- ½ bunch fresh cilantro (coriander leaves) – stems and roots removed
- Fresh lemon juice – to taste
- Salt – to taste
Method
Step 1: Prepare the Ingredients
- Rinse and roughly chop the cilantro, peel and chop the ginger, and slice the green chilli.
Step 2: Blend the Chutney
- Add shredded coconut, ginger, green chilli, and cilantro to a blender or food processor.
- Add lemon juice and a small amount of water (as needed) to assist blending.
Step 3: Adjust Seasoning
- Blend into a smooth, pesto-like chutney.
- Taste and adjust salt and lemon juice according to your preference.
Serving Suggestion
- Serve this green coconut chutney fresh with dosa, idli, or South Indian snacks.
- Best consumed immediately or within a few hours for optimal flavor and color.
