Coconut Chutney (Type 2)

Ingredients:

  • 3 tablespoons shredded coconut
  • 1-inch piece fresh ginger, chopped
  • 1 fresh green chilli
  • ½ bunch cilantro (stems and roots removed)
  • Fresh lemon juice, to taste
  • Salt to taste

Method:

  1. Add all the ingredients to a blender or food processor.
  2. Blend into a pesto-like sauce, adding a little water if needed to reach the desired consistency.
  3. Adjust salt and lemon juice to taste.
  4. Serve fresh with South Indian dishes like dosa or idli.
