Coconut Chutney (Type 2)
Ingredients:
- 3 tablespoons shredded coconut
- 1-inch piece fresh ginger, chopped
- 1 fresh green chilli
- ½ bunch cilantro (stems and roots removed)
- Fresh lemon juice, to taste
- Salt to taste
Method:
- Add all the ingredients to a blender or food processor.
- Blend into a pesto-like sauce, adding a little water if needed to reach the desired consistency.
- Adjust salt and lemon juice to taste.
- Serve fresh with South Indian dishes like dosa or idli.
