Mix Vegetable Soup
A warm, hearty, and nutritious soup loaded with fresh vegetables and mild spices.
Ingredients
- 1/2 cup carrots (chopped)
- 1/4 cup French beans (chopped)
- 1/2 cup peas (shelled)
- 1 1/2 cup tomato puree
- 1 tsp garlic paste
- 1 tsp ginger paste
- 2 tsp coriander leaves (chopped)
- 3–4 tsp butter
- 3 glasses water
- Salt and pepper to taste
- Cheese (grated) – for garnishing

**Prepare the base
- Melt butter in a pan.
- Add ginger paste and garlic paste; sauté briefly.
- Mix in tomato puree and stir well.
- Add carrots, French beans, peas, and water.

**Cook the vegetables
- Pressure cook the mixture for 5–6 minutes until vegetables soften.

**Finish the soup
- Add chopped coriander leaves.
- Boil the soup for 2–3 minutes to enhance flavor.
- Garnish with grated cheese before serving.

**Optional thickening
- For a thicker soup, mix 2 tsp cornflour in 1/2 cup milk and add while boiling.
