Mix Vegetable Soup

A warm, hearty, and nutritious soup loaded with fresh vegetables and mild spices.

Ingredients

  1. 1/2 cup carrots (chopped)
  2. 1/4 cup French beans (chopped)
  3. 1/2 cup peas (shelled)
  4. 1 1/2 cup tomato puree
  5. 1 tsp garlic paste
  6. 1 tsp ginger paste
  7. 2 tsp coriander leaves (chopped)
  8. 3–4 tsp butter
  9. 3 glasses water
  10. Salt and pepper to taste
  11. Cheese (grated) – for garnishing

Instructions

  1. **Prepare the base

    • Melt butter in a pan.
    • Add ginger paste and garlic paste; sauté briefly.
    • Mix in tomato puree and stir well.
    • Add carrots, French beans, peas, and water.
  2. **Cook the vegetables

    • Pressure cook the mixture for 5–6 minutes until vegetables soften.
  3. **Finish the soup

    • Add chopped coriander leaves.
    • Boil the soup for 2–3 minutes to enhance flavor.
    • Garnish with grated cheese before serving.
  4. **Optional thickening

    • For a thicker soup, mix 2 tsp cornflour in 1/2 cup milk and add while boiling.
