Basic Bean Soup
Basic Bean Soup is a hearty and comforting soup made with tender beans, vegetables, and flavorful seasonings. Ingredients:
- 2 cups dried beans (such as navy beans, black beans, kidney beans, or a mix)
- 8 cups water or vegetable broth
- 2 tablespoons olive oil or vegetable oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste

- If using dried beans, rinse them under cold water and pick out any debris. Soak the beans overnight in a large bowl of water.
