Pav Bhaji

Ingredients

  • 12 Pav Buns
  • 2 Onions, chopped
  • 5 Tomatoes, chopped
  • 3 Potatoes, boiled and diced
  • 1 cup Peas
  • 1/2 cup Carrot, chopped
  • 1/2 cup Beans, chopped
  • 1/2 cup Cabbage, chopped
  • 1/2 cup Capsicum, chopped
  • 1 cup Cauliflower, chopped
  • 1' piece Ginger, grated
  • 2 Green Chillies, finely chopped
  • Garlic (optional)
  • 3 tsp Coriander (Dhania) Powder
  • 2 tsp Cumin (Jeera) Powder
  • 2 tsp Chilli Powder
  • 4 tsp Pav Bhaji Masala
  • Salt to taste
  • 1/2 cup Fresh Coriander Leaves for garnish
  • 2 tsp Lemon Juice
  • Butter or Oil for cooking
  1. Preparation

    • Chop all vegetables and keep aside.
    • Boil potatoes, peas, beans, carrot, cauliflower until tender.
    • Grate ginger and finely chop green chillies.
  2. Cooking the Bhaji

    • Heat oil or butter in a pan.
    • Add onions and sauté until translucent.
    • Add tomatoes, salt, and all powdered spices (coriander powder, cumin powder, chilli powder, pav bhaji masala).
    • Cook until oil starts separating from the masala.
    • Add steamed or boiled vegetables to the onion-tomato mixture.
    • Add 1 cup water and bring to a boil.
    • Mash the mixture with a potato masher until smooth and well-blended.
    • Simmer for a few minutes until all vegetables are cooked thoroughly.
  3. Garnishing

    • Add chopped coriander leaves and lemon juice.
    • Mix gently.
  4. Preparing the Pav

    • Slit the pav buns from the middle.
    • Apply butter inside and toast on a preheated pan until golden brown.
  5. Serving

    • Serve hot bhaji with buttered pav.
    • Accompany with lemon wedges and chopped onions if desired.
