Khajur Burfi
Khajur Burfi is a rich, healthy Indian sweet made with dates, condensed milk, coconut, and dry fruits — naturally sweet, chewy, and perfect for festive indulgence.
Ingredients
- 1 tin condensed milk
- 1 kg dates (khajur), deseeded
- 250 g mixed dry fruits (almonds, cashews, pistachios)
- ½ cup desiccated coconut

Prepare the Base Mixture
- Coarsely break the deseeded dates into small pieces.
- Combine dates, condensed milk, and chopped dry fruits in a heavy-bottomed non-stick pan.
- Cook on a slow flame, stirring continuously to avoid sticking to the bottom.

Cook the Mixture
- Keep stirring gently as the mixture thickens.
- Continue cooking until it forms a soft, cohesive lump that leaves the sides of the pan.
- Ensure the mixture doesn’t burn or overcook.

Shape the Burfi
- Spread some desiccated coconut evenly on a sheet of butter paper.
- Grease your hands lightly with ghee.
- Take a portion of the cooked mixture and roll it into a thick cylindrical log on the butter paper.
- Roll the log over the coconut to coat it evenly on all sides.

Set and Cut
- Chill the rolls in the refrigerator until firm.
- Slice them into round pieces for burfi rolls.
- Alternatively, spread the warm mixture into a greased tray, flatten it evenly, and let it set before cutting into square pieces.

- Serve Khajur Burfi chilled or at room temperature.
