Matar Mushroom
Matar Mushroom is a rich and aromatic curry made with green peas and mushrooms simmered in a creamy, spiced gravy.
Ingredients
- Green peas (shelled) 1½ cups
- Mushrooms 200 g, cleaned and quartered
- Oil 2 tbsp
- Green cardamoms 4
- Cinnamon 1"
- Onions 2 large, finely chopped
- Ginger paste 1 tbsp
- Garlic paste 1 tbsp
- Tomato puree ½ cup
- Red chilli powder 1 tbsp
- Coriander powder 1 tbsp
- Turmeric powder 1 tsp
- Garam masala powder 1 tsp
- Salt to taste
- Cashewnut paste ½ cup

Preparing the Base
- Clean, wash, and quarter the mushrooms.
- Finely chop the onions.
- Heat oil in a kadhai and add green cardamoms, cinnamon, and onions.
- Sauté until the onions turn light golden.

Cooking the Masala
- Add ginger paste and garlic paste; sauté for half a minute.
- Add tomato puree, red chilli powder, coriander powder, turmeric, garam masala, and salt.
- Cook until the oil separates from the masala.
- Add cashew paste dissolved in 1 cup water and mix well.

Finishing the Curry
- Add another cup of water and bring the gravy to a boil.
- Add green peas and mushrooms, adjust seasoning, and mix.
- Cook on low heat for 5 minutes.
- Serve hot with naan or roti.
