Paneer Bhurji
A quick and comforting North Indian dish made with crumbled paneer cooked in mildly spiced onion-tomato masala.
Ingredients
- 200 gms paneer (crumbled)
- 1 tbsp oil
- 1/4 tsp cumin seeds
- 2 green chillies (finely chopped)
- 1 small onion (finely chopped)
- 1 medium tomato (finely chopped)
- 1 tsp ginger-garlic paste
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala powder
- 1/2 tsp salt

**Preparing vegetables
- Finely chop the onion, tomato, and green chillies.

**Making the base
- Heat oil in a deep-bottomed pan.
- Add cumin seeds and let them splutter.
- Add chopped onions and ginger-garlic paste.
- Fry till onions turn golden brown.

**Cooking the masala
- Add chopped green chillies and tomatoes.
- Fry till tomatoes become soft and pulpy.

**Adding spices
- Add turmeric powder, garam masala powder, and salt.
- Sprinkle a little water and mix well so spices combine evenly.

**Adding paneer
- Add crumbled paneer to the masala.
- Stir fry for about 5 minutes till paneer blends well with the masala.

- Garnish with chopped coriander leaves.
- Serve hot with roti, paratha, or bread.
