Chhundo
Chhundo is a traditional Indian condiment made from grated raw mangoes that are cooked with sugar and spices to create a sweet and tangy pickle. It is typically enjoyed as a side dish or accompaniment to various Indian meals.
Ingredients:
- 2 large raw mangoes, peeled and grated
- 1 1/2 cups granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon asafoetida (hing)
- 2 tablespoons oil

Prepare the Mangoes:
- Wash the raw mangoes thoroughly and peel them using a vegetable peeler.
- Grate the peeled mangoes using a box grater or a food processor. Discard the seeds.

Cook the Mangoes:
- Heat oil in a heavy-bottomed pan or kadhai over medium heat.
- Add mustard seeds and cumin seeds to the hot oil. Let them splutter.
- Add the grated mangoes to the pan and cook for 5-7 minutes, stirring occasionally, until they soften slightly.

Add Sugar and Spices:
- Add granulated sugar, salt, turmeric powder, red chili powder, and asafoetida to the cooked mangoes.
- Mix well to combine all the ingredients.

Cook the Chhundo:
- Continue cooking the mango mixture over medium-low heat, stirring frequently to prevent sticking, for about 20-25 minutes or until the sugar melts and the mixture thickens to a jam-like consistency. It should have a glossy appearance.

Cool and Store:
- Once the chhundo reaches the desired consistency, remove it from the heat and let it cool to room temperature.
- Transfer the cooled chhundo to clean, dry glass jars with tight-fitting lids.

Serve:
- Chhundo can be served immediately or stored in the refrigerator for up to several weeks.
- Enjoy chhundo as a side dish or condiment with Indian meals, snacks, or as a spread on bread or crackers.

Optional Variation:
- You can add a pinch of fenugreek seeds (methi) or fennel seeds (saunf) for added flavor if desired. These spices can be added along with the mustard seeds and cumin seeds in step 2.
