Lemon Peach Pudding
A delightful, creamy dessert with layers of peaches, lemon jelly, and whipped cream, offering a perfect balance of fruity sweetness and tangy freshness.
Ingredients
- 1 tin peach
- 1 packet lemon jelly
- 2 cups fresh cream
- 2 tbsp sugar
- 1 lemon

Prepare the Lemon Jelly
- Boil 2 cups of water in a saucepan.
- Add the lemon jelly packet and stir until completely dissolved.
- Remove from heat and let it cool to room temperature.

Prepare the Sweet and Citrus Base
- Grind the sugar to a fine powder.
- Squeeze the juice from one lemon and set aside.

Prepare the Peaches
- Drain the syrup from the peach tin.
- Cut the peaches into small, bite-sized pieces.

Set the First Jelly Layer
- Place a few peach pieces evenly at the bottom of a pudding tin.
- Pour half of the cooled jelly mixture over the peaches.
- Refrigerate until the layer sets firmly.

Prepare the Cream Mixture
- Keep the remaining jelly in the refrigerator for a short time until slightly thickened (but not set).
- Beat 1 cup of cream until light and fluffy.
- Add lemon juice, sugar, and a few pieces of peach to the beaten cream.
- Mix in the semi-set jelly to combine everything smoothly.

Assemble the Pudding
- Take the tin from the refrigerator once the first layer is set.
- Gently spread the cream-jelly mixture over the set jelly layer.
- Refrigerate again until the pudding is completely set and firm.

- Once set, top the pudding with the remaining whipped cream.
- Garnish with the leftover peach pieces.
