Lemon Coffee Pudding
A refreshing and creamy dessert that beautifully blends the tang of lemon with the rich aroma of coffee for a delightful twist.
Ingredients
- 1 tsp coffee
- 1 packet lemon jelly
- 2 cups fresh cream
- 3 tbsp sugar

Prepare the Lemon Jelly Base
- Boil 2 cups of water and dissolve the lemon jelly completely in it.
- Once the jelly is well mixed, remove it from the flame and allow it to cool slightly.

Set the Lemon Layer
- Pour a portion of the prepared jelly into a tin or mold to form the base layer.
- Place it in the refrigerator and let it set partially.

Prepare the Coffee Jelly
- Add the coffee to the remaining portion of the jelly mixture.
- Stir well until the coffee is fully blended.
- Refrigerate this coffee jelly separately to cool down.

Prepare the Cream Mixture
- Grind the sugar into a fine powder.
- Blend the powdered sugar with the fresh cream until smooth and fluffy.

Combine the Coffee Jelly with Cream
- Once the coffee jelly has cooled, add it to the cream mixture.
- Mix gently to create a smooth, coffee-flavored creamy blend.

Layer and Set the Pudding
- Pour the coffee-cream mixture over the already set lemon jelly in the tin.
- Refrigerate again and allow the pudding to set completely.

Serve
- Once fully set, unmold if desired and serve chilled.
