Arbi Pickle
Arbi pickle, also known as colocasia pickle or taro root pickle, is a tangy and spicy Indian condiment made with boiled and sliced arbi (taro root) combined with spices, vinegar, and oil. Here's a simple recipe to make Arbi Pickle:
Ingredients:
- 250 grams arbi (taro root), peeled and boiled until tender
- 2 tablespoons mustard oil (or any vegetable oil)
- 1 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds (methi)
- 1/2 teaspoon fennel seeds (saunf)
- 1/4 teaspoon asafoetida (hing)
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder (adjust to taste)
- 2 tablespoons vinegar
- Salt to taste

Prepare Arbi:
- Wash, peel, and boil the arbi (taro root) until tender. Drain the water and allow the boiled arbi to cool completely.

- Once cooled, slice the boiled arbi into thin rounds or cubes. Set aside.

- Heat mustard oil (or any vegetable oil) in a pan over medium heat.

Temper Spices:
- Add mustard seeds, fenugreek seeds, fennel seeds, and asafoetida to the hot oil. Let the seeds splutter and release their aroma.

Add Turmeric and Red Chili Powder:
- Lower the heat and add turmeric powder and red chili powder to the pan. Stir well to combine with the tempered spices.

- Add the sliced arbi (taro root) to the pan. Mix gently to coat the arbi slices with the spice mixture.
