Paneer Bagh E Bahar

A rich and mildly sweet paneer delicacy cooked with cashew cream, fruits, and vegetables in a creamy gravy.

Ingredients

  1. 200 gms paneer cubes
  2. 1/4 cup cashewnut paste
  3. 1/2 cup fresh cream
  4. 1 cup yellow capsicum (chopped)
  5. 1 cup tomato (chopped)
  6. 1 cup pineapple (chopped)
  7. 1 tsp garlic (finely chopped)
  8. 2 green chillies (vertically cut)
  9. 2 tblsp refined oil
  10. 2 tblsp tomato sauce
  11. 1 tsp salt
  12. 1 tsp pepper
  13. 1 tsp sugar

Method

  1. **Preparing ingredients

    • Cut paneer, capsicum, pineapple, and tomatoes into 1-inch pieces and keep aside.
  2. **Making cashew cream

    • Grind cashew nuts with fresh cream into a smooth paste.
  3. **Tempering

    • Heat oil in a kadai.
    • Add chopped garlic and green chillies and fry till lightly brown.
  4. **Cooking the base

    • Add the cashew-cream paste and mix well on medium heat.
  5. **Adding vegetables

    • Add capsicum and stir-fry on high flame for a minute.
    • Add pineapple and tomatoes and cook till slightly soft.
  6. **Adding paneer and seasoning

    • Add paneer cubes, tomato sauce, salt, and pepper.
    • Mix gently to avoid breaking paneer.
  7. **Final cooking

    • Stir-fry for about 5 minutes.
    • Add sugar, mix well, and cook for another minute.
  8. **Serving

    • Transfer to a serving dish.
    • Sprinkle 2 tbsp fresh cream on top and serve hot with tandoori roti.
