Paneer Bagh E Bahar
A rich and mildly sweet paneer delicacy cooked with cashew cream, fruits, and vegetables in a creamy gravy.
Ingredients
- 200 gms paneer cubes
- 1/4 cup cashewnut paste
- 1/2 cup fresh cream
- 1 cup yellow capsicum (chopped)
- 1 cup tomato (chopped)
- 1 cup pineapple (chopped)
- 1 tsp garlic (finely chopped)
- 2 green chillies (vertically cut)
- 2 tblsp refined oil
- 2 tblsp tomato sauce
- 1 tsp salt
- 1 tsp pepper
- 1 tsp sugar
Method

**Preparing ingredients
- Cut paneer, capsicum, pineapple, and tomatoes into 1-inch pieces and keep aside.

**Making cashew cream
- Grind cashew nuts with fresh cream into a smooth paste.

**Tempering
- Heat oil in a kadai.
- Add chopped garlic and green chillies and fry till lightly brown.

**Cooking the base
- Add the cashew-cream paste and mix well on medium heat.

**Adding vegetables
- Add capsicum and stir-fry on high flame for a minute.
- Add pineapple and tomatoes and cook till slightly soft.

**Adding paneer and seasoning
- Add paneer cubes, tomato sauce, salt, and pepper.
- Mix gently to avoid breaking paneer.

**Final cooking
- Stir-fry for about 5 minutes.
- Add sugar, mix well, and cook for another minute.

**Serving
- Transfer to a serving dish.
- Sprinkle 2 tbsp fresh cream on top and serve hot with tandoori roti.
