Garlic Rice
A simple, fragrant, and flavorful rice dish, Garlic Rice combines the rich aroma of golden-fried garlic, the heat of green chilies, and the crunch of roasted nuts. This quick and comforting recipe makes an excellent side dish or a light standalone meal.
Ingredients
- 2 cups cooked rice
- 2 tsp crushed garlic
- 2 green chilies, chopped
- 2 tbsp cashew nuts
- 1 tbsp slivered almonds
- 1 tsp chopped fresh coriander
- 2 tbsp ghee
- Salt and pepper to taste

Prepare the Base

Heat 2 tablespoons of ghee in a heavy wok or deep pan over medium heat.

Once the ghee is hot, add crushed garlic and chopped green chilies.

Sauté gently, stirring continuously until the garlic turns light golden brown and releases its aroma. Be careful not to burn the garlic, as it can turn bitter.

Add Nuts for Crunch

Add cashew nuts and slivered almonds to the wok.

Roast for about 30 seconds, stirring constantly until the nuts are lightly golden and fragrant.

This step adds both texture and richness to the dish.

Combine with Rice

Add the cooked rice to the wok. Make sure the rice is fluffy and cooled slightly so it doesn’t become mushy.

Sprinkle salt and pepper to taste.

Gently toss everything together so that the rice is evenly coated with the ghee, garlic, and nut mixture.

Stir for 2–3 minutes on low heat to allow the flavors to blend perfectly.

Garnish and Serve

Turn off the heat and sprinkle fresh chopped coriander on top.

Give the rice one last gentle mix.
