Panchmel Dal
Ingredients
- 50 g split green gram dal (moong dal)
- 50 g urad dal (dhuli)
- 50 g arhar dal (toor dal)
- 50 g horse beans
- 1/2 tsp cumin seeds
- A pinch of asafoetida
- 1 1/2 tsp salt
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp spice blend
- 1 tsp coriander powder
- Juice of 1 lemon
- 1 tbsp coriander leaves (finely chopped)
- 2 tbsp clarified butter (ghee)
Method

**Preparing the dals
- Mix all the lentils together and wash thoroughly.
- Soak them in water for about 30 minutes.

**Cooking the dal
- Transfer the soaked dals to a pressure cooker.
- Add 4 cups of water, salt, spice blend, and turmeric powder.
- Pressure cook until the dals are soft and well cooked.
- Remove from heat and keep aside.

**Preparing the tempering
- Heat ghee in a pan.
- Add cumin seeds and asafoetida and let them crackle.

**Final mixing
- Add red chilli powder and coriander powder to the tempering.
- Pour this tempering over the cooked dal and mix well.

**Garnishing and serving
- Sprinkle finely chopped coriander leaves on top.
- Add lemon juice and mix gently.
- Serve hot Panchmel Dal with rice or roti.
