Panchmel Dal

Ingredients

  1. 50 g split green gram dal (moong dal)
  2. 50 g urad dal (dhuli)
  3. 50 g arhar dal (toor dal)
  4. 50 g horse beans
  5. 1/2 tsp cumin seeds
  6. A pinch of asafoetida
  7. 1 1/2 tsp salt
  8. 1 tsp red chilli powder
  9. 1/2 tsp turmeric powder
  10. 1/2 tsp spice blend
  11. 1 tsp coriander powder
  12. Juice of 1 lemon
  13. 1 tbsp coriander leaves (finely chopped)
  14. 2 tbsp clarified butter (ghee)

Method

  1. **Preparing the dals

    • Mix all the lentils together and wash thoroughly.
    • Soak them in water for about 30 minutes.
  2. **Cooking the dal

    • Transfer the soaked dals to a pressure cooker.
    • Add 4 cups of water, salt, spice blend, and turmeric powder.
    • Pressure cook until the dals are soft and well cooked.
    • Remove from heat and keep aside.
  3. **Preparing the tempering

    • Heat ghee in a pan.
    • Add cumin seeds and asafoetida and let them crackle.
  4. **Final mixing

    • Add red chilli powder and coriander powder to the tempering.
    • Pour this tempering over the cooked dal and mix well.
  5. **Garnishing and serving

    • Sprinkle finely chopped coriander leaves on top.
    • Add lemon juice and mix gently.
    • Serve hot Panchmel Dal with rice or roti.
