Black Eye Beans Curry

Ingredients:

  • 1 cup dried black-eyed beans
  • 2 tablespoons oil (vegetable or mustard oil)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Black-eyed Beans:

    • Rinse the black-eyed beans under cold water and soak them in water for at least 4 hours or overnight. Drain and rinse before using.
  2. Cook the Black-eyed Beans:

    • In a pressure cooker or large pot, add the soaked and drained black-eyed beans along with enough water to cover them by about an inch.
    • Pressure cook for 2-3 whistles or cook in a pot until the beans are tender but not mushy. Drain and set aside.
  3. Make the Curry:

    • Heat oil in a large pan or kadhai over medium heat. Add cumin seeds and let them splutter.
    • Add chopped onions and sauté until they turn translucent.
  4. Add Aromatics:

    • Add minced garlic, grated ginger, and slit green chilies to the pan. Sauté for a couple of minutes until aromatic.
  5. Add Spices:

    • Lower the heat and add turmeric powder, coriander powder, and red chili powder to the pan. Mix well and cook for a minute to toast the spices.
  6. Add Tomatoes:

    • Add chopped tomatoes to the pan. Cook until they turn soft and mushy, and the oil starts to separate from the masala.
  7. Add Cooked Beans:

    • Add the cooked black-eyed beans to the pan along with some salt. Mix well to coat the beans with the masala.
  8. Simmer:

    • Add a little water if the mixture seems dry. Cover and simmer the curry for 8-10 minutes, stirring occasionally, to allow the flavors to meld together.
  9. Garnish and Serve:

    • Once the curry reaches the desired consistency and the flavors have developed, remove from heat.
    • Garnish with fresh coriander leaves.
    • Serve hot with rice or roti.
