Black Eye Beans Curry
Ingredients:
- 1 cup dried black-eyed beans
- 2 tablespoons oil (vegetable or mustard oil)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2-3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit lengthwise
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:

Prepare the Black-eyed Beans:
- Rinse the black-eyed beans under cold water and soak them in water for at least 4 hours or overnight. Drain and rinse before using.

Cook the Black-eyed Beans:
- In a pressure cooker or large pot, add the soaked and drained black-eyed beans along with enough water to cover them by about an inch.
- Pressure cook for 2-3 whistles or cook in a pot until the beans are tender but not mushy. Drain and set aside.

Make the Curry:
- Heat oil in a large pan or kadhai over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.

Add Aromatics:
- Add minced garlic, grated ginger, and slit green chilies to the pan. Sauté for a couple of minutes until aromatic.

Add Spices:
- Lower the heat and add turmeric powder, coriander powder, and red chili powder to the pan. Mix well and cook for a minute to toast the spices.

Add Tomatoes:
- Add chopped tomatoes to the pan. Cook until they turn soft and mushy, and the oil starts to separate from the masala.

Add Cooked Beans:
- Add the cooked black-eyed beans to the pan along with some salt. Mix well to coat the beans with the masala.

Simmer:
- Add a little water if the mixture seems dry. Cover and simmer the curry for 8-10 minutes, stirring occasionally, to allow the flavors to meld together.

Garnish and Serve:
- Once the curry reaches the desired consistency and the flavors have developed, remove from heat.
- Garnish with fresh coriander leaves.
- Serve hot with rice or roti.
