Moru Curry

A light, tangy South Indian yogurt-based curry enriched with coconut and a flavorful tempering.

Ingredients

  1. 2 tbsp yogurt
  2. 1/2 cup coconut paste
  3. 1 tbsp oil
  4. 1/4 tsp fenugreek powder (optional)
  5. 1/2 tsp cumin seeds
  6. A pinch of turmeric
  7. A pinch of mustard seeds
  8. 1 tbsp chopped onion
  9. 4 broken whole red chillies
  10. 1/2 tsp garlic
  11. 1 tsp ginger
  12. Curry leaves

Instructions

  1. Prepare the Base

    • Blend coconut paste, yogurt, and green chillies into a smooth mixture.
    • Add 1 cup water, red chilli powder, turmeric, and salt.
    • Bring the mixture to a gentle boil and switch off the flame.
  2. Prepare the Tempering

    • Heat oil in a pan.
    • Add mustard seeds, cumin seeds, and fenugreek powder (if using) and let them splutter.
    • Add chopped onion, broken red chillies, garlic, ginger, and curry leaves; sauté briefly.
  3. Combine

    • Pour the tempering over the prepared curry base and mix well before serving.
