Pal Payasam
Ingredients
- 3 litres milk
- 700 gm sugar
- 180 gm dried red rice
- 3–4 almonds and cashewnuts
Method

**Preparing the milk
- Pour the milk into a heavy-bottomed vessel.
- Boil on medium flame, stirring occasionally, until it reduces slightly and becomes thick.

**Adding sugar
- Add the sugar to the boiling milk.
- Stir continuously until the sugar dissolves completely.

**Cooking the rice
- Wash the dried red rice thoroughly.
- Add the rice to the sweetened milk once it starts boiling again.
- Lower the flame and simmer gently.

**Simmering the payasam
- Cook on low flame until the rice is soft and well cooked.
- Stir occasionally to prevent sticking at the bottom.

**Garnishing and serving
- Chop the almonds and cashewnuts finely.
- Garnish the payasam before serving.
- Serve warm or chilled as preferred.
