Pal Payasam

Ingredients

  1. 3 litres milk
  2. 700 gm sugar
  3. 180 gm dried red rice
  4. 3–4 almonds and cashewnuts

Method

  1. **Preparing the milk

    • Pour the milk into a heavy-bottomed vessel.
    • Boil on medium flame, stirring occasionally, until it reduces slightly and becomes thick.
  2. **Adding sugar

    • Add the sugar to the boiling milk.
    • Stir continuously until the sugar dissolves completely.
  3. **Cooking the rice

    • Wash the dried red rice thoroughly.
    • Add the rice to the sweetened milk once it starts boiling again.
    • Lower the flame and simmer gently.
  4. **Simmering the payasam

    • Cook on low flame until the rice is soft and well cooked.
    • Stir occasionally to prevent sticking at the bottom.
  5. **Garnishing and serving

    • Chop the almonds and cashewnuts finely.
    • Garnish the payasam before serving.
    • Serve warm or chilled as preferred.
