Green All Purpose Chutney

A versatile and flavorful chutney, made with fresh green chillies, coriander, lemon, and a touch of jaggery. This vibrant chutney adds a burst of flavor to any meal and pairs perfectly with snacks, sandwiches, or Indian breakfasts like dhokla, idli, and paratha.

Ingredients

  • 15 green chillies
  • 1/2 cup coriander leaves
  • 1/2 lemon
  • 1 tbsp sev or crushed potato wafers
  • 1/2 tsp jaggery
  • Salt to taste
  • 1 tsp oil
  • 1 garlic clove

Method

  1. Prepare the ingredients:

    • Wash and roughly chop the coriander leaves.
    • Peel the garlic clove and set aside all other ingredients.
  2. Blend the chutney:

    • Add green chillies, coriander leaves, lemon juice, sev (or crushed potato wafers), jaggery, salt, and garlic to a small mixie jar.
  3. Temper and add oil:

    • Heat oil in a small pan and add a pinch of asafoetida (optional).
    • Pour this hot oil into the mixie jar with the other ingredients.
  4. Grind the mixture:

    • Blend everything into a smooth chutney.
    • Avoid adding water unless necessary; use minimal water only to adjust consistency.
  5. Store properly:

    • Transfer the chutney to a clean, dry glass jar.
    • Refrigerate immediately to retain freshness and color.

Note

  • Sev is a crispy fried Indian snack made from gram flour, often used for texture and mild flavor in chutneys.
  • To enhance shelf life, ensure no excess moisture enters the jar.
  • You can also add a few mint leaves for a refreshing twist.
