Methi Thepla
A soft, flavorful Gujarati flatbread made with fresh methi leaves and mild spices.
Ingredients

**Dry Ingredients
- 1 cup wheat flour
- 1 tsp red chilli powder
- 1/2 tsp turmeric (haldi)
- 1 tsp coriander powder
- 1 tsp cumin seeds powder
- Salt to taste

**Fresh & Aromatics
- 2 crushed green chillies
- 1 tbsp ginger–garlic paste
- 1 tsp ajwain
- 1 pinch hing
- 1/2 bunch methi leaves (chopped)

**For Kneading & Cooking
- Oil as needed
Instructions

**Prepare the dough
- Add wheat flour into a wide mixing bowl.
- Mix in all ingredients including methi leaves, spices, ginger–garlic, green chillies, ajwain, and hing.
- Add 1 tsp oil and knead into a smooth dough.
- Rest the dough for 15 minutes.

**Shape the theplas
- Divide the dough into equal-sized small balls.
- Roll each ball into a thin round thepla using a rolling pin.

**Cook the theplas
- Heat a griddle and place one rolled thepla on it.
- Roast one side, then flip.
- Spread 1/2 tsp oil on the cooked side and flip again.
- Repeat oiling and cooking on the other side until evenly roasted.
- Remove once golden spots appear and repeat for all dough balls.
- Serve hot with butter, chutney, or curd.
