Stuffed Paneer Pakoda

Stuffed Paneer Pakoda is a crispy and indulgent Indian snack made with paneer slices stuffed with chutney or spices, dipped in gram flour batter, and deep-fried — a perfect tea-time or party treat.

Ingredients

For the Pakoda:

  • 200 grams paneer – cut into medium-thick rectangular slices
  • 1 cup chickpea flour (besan)
  • 2 tablespoons rice flour (optional, for crispiness)
  • 1 teaspoon carom seeds (ajwain)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt – to taste
  • Water – as needed
  • Oil – for deep frying

For the Stuffing:

  • 3 tablespoons green chutney (mint-coriander chutney)
  • A mix of finely chopped coriander leaves, green chilies, chat masala, and lemon juice

For Serving (Optional):

  • Mint chutney
  • Tamarind chutney
  • Sliced onions
  • Chaat masala

Method

  1. Prepare the Paneer Sandwiches

    • Slice paneer into equal-sized rectangles or squares, about 1/2 inch thick.
    • Spread a small amount of green chutney on one paneer slice and cover with another to make a sandwich.
    • Press lightly to seal. Repeat for all slices.
  2. Make the Batter

    • In a mixing bowl, combine chickpea flour, rice flour, ajwain, cumin, turmeric, red chili, garam masala, and salt.
    • Add water slowly while whisking to create a smooth, lump-free batter. It should be thick enough to coat the paneer sandwiches.
  3. Heat the Oil

    • Heat oil in a deep frying pan over medium flame. Test the oil by dropping a little batter — it should rise and sizzle immediately.
  4. Dip and Fry

    • Dip each stuffed paneer sandwich into the batter, coating it evenly on all sides.
    • Gently drop into the hot oil and fry until golden brown and crisp, flipping occasionally.
    • Remove using a slotted spoon and place on paper towels to drain excess oil.
  5. Serve

    • Serve hot with mint chutney, tamarind chutney, or ketchup.
    • Garnish with sliced onions and a sprinkle of chaat masala for an extra kick.

Tips:

  • Use thick, firm paneer for best results.
  • You can also add a thin layer of mashed spiced potatoes for variation.
  • To make it extra indulgent, insert a thin slice of cheese along with the chutney.
