Mixed Vegetable Salad

A light, colourful, and nutritious salad made with steamed vegetables and fresh seasonings.

Ingredients

  1. 50 g French beans
  2. 3–4 carrots
  3. 1 small cabbage
  4. 100 g broccoli (florets)
  5. 1 capsicum
  6. Salt to taste
  7. 1 tomato (thin rings)
  8. 2 green chillies (slit)
  9. Finely chopped coriander leaves
  10. Juice of 1 lemon
  11. Black pepper powder to taste

Instructions

  1. Prepare and steam the vegetables

    • Cut French beans, carrots, cabbage, broccoli, and capsicum as required.
    • Steam all the cut vegetables until they are cooked yet firm.
  2. Mix the salad

    • Add steamed vegetables to a bowl.
    • Add tomato rings and slit green chillies.
    • Add salt, black pepper powder, and lemon juice.
    • Mix everything well.
  3. Garnish and serve

    • Top with finely chopped coriander leaves.
