Makai na Bharta
A flavorful Gujarati-style corn bharta made with fresh corn, spices, and sautéed aromatics.
Ingredients
- 1 kg fresh corn (niblets)
- 3 medium onions (finely chopped)
- 3 medium tomatoes (chopped)
- 6–7 green chillies (chopped)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp red chilli powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
- Coriander leaves for garnish

Prepare the Ingredients
- Boil whole corns, remove the niblets, and grind coarsely.
- Finely chop the onions.
- Chop tomatoes.
- Chop green chillies.

Sauté the Base
- Heat oil in a kadhai. Add cumin seeds and allow them to crackle.
- Add the chopped onions. Sauté until they turn light brown.
- Add green chillies. Stir-fry for about 30 seconds.

Add the Spices
- Add red chilli powder, turmeric powder, coriander powder, garam masala, and salt.
- Stir-fry briefly to release the aromas.

Cook the Tomatoes
- Add chopped tomatoes.
- Cook until they soften and blend into the masala.

Add and Cook the Corn
- Add the coarsely ground corn and additional salt if needed.
- Add a little water to adjust consistency.
- Stir-fry for 5–10 minutes until everything combines well.

Serve
- Garnish with chopped coriander leaves.
- Serve hot with roti, puri, or paratha.
